8 medium washed cucumbers
7 cups sugar
4 cups cider vinegar
2 t. salt
2 T. pickling spice (in cheesecloth bag)
Day 1: pour boiling water over whole cucumbers (place in plastic container like a cake ring top)
Day 2: drain water and repeat process
Day 3: drain water and repeat process
Day 4: drain water and repeat process
Day 5: drain water and slice cucumbers; make hot boiling syrup from listed ingredients and pour over cukes
Day 6: let cukes rest and you do the same
Day 7: take everything from day 5, heat to boiling, and seal in hot sterilized jars
Makes about 3 quarts. Takes awhile but well worth it.
